
NORA’S “PRIMAL GAUCHO” ARGENTINE CHIMICHURRI DIPPING/BASTING SAUCE
1 bunch organic cilantro
1 handful of fresh organic oregano
1 bunch organic flat leaf parsley
8 cloves organic garlic, minced (less if you have a hot date planned)
2 cups extra virgin organic olive oil
1/4-1/2 cup raw organic cider vinegar
1/2 to 1 organic lemon (juice of)
2 tablespoons finely diced red or sweet organic onion
1 TBS dried organic oregano (optional)
1 teaspoon organic black pepper
1/2-1 teaspoon Celtic or Himalayan sea salt
2 tsp red pepper flakes (or add to taste/spiciness)
Finely chop (or use a food processor) the cilantro, oregano and parsley and then just toss all the rest together in it and blend with a spoon into mouth watering perfection. Use as much olive oil as you feel you want to either dilute or ultra concentrate the ingredients. It can either be a “liquidy” dipping sauce or a pesto-like condiment (shove over, pesto!).
This will make enough for a family or party of 4-6 people. That said, it all depends on who is willing to share. 🙂
You will find yourself dipping your meats/poultry/fish and maybe even veggies into this stuff and keeping it on the table as a regular condiment. Make plenty to have on hand to help prevent conflict. 🙂 Good for breakfast lunch or dinner. Heck, why not all three??
